Cheesy Chicken Meatballs
Ingredients
Meatballs
500 g chicken mince
1 tbsp onion relish
1 tsp fresh basil @gourmetgarden_aus
Gluten free bread crumbs, enough to bind @lifestyle_bakery
Bocconcini cheese balls, cut into small pieces @lacasadelformaggio
Sauce
1 jar passata sauce
1/4 cup Worcestershire sauce
To finish
1 cup grated cheese
Method
Preheat oven to 180°C fan forced.
In a bowl, combine the chicken mince, onion relish, basil and bread crumbs. Mix until just combined.
In a baking dish, add the passata and Worcestershire sauce and mix to combine.
Take a tablespoon of the meatball mixture, flatten slightly, place a piece of bocconcini in the centre and roll into a ball. Repeat to make 16 meatballs.
Place the meatballs directly into the sauce in the baking dish.
Sprinkle the grated cheese over the top.
Bake for 30 to 35 minutes or until the meatballs are cooked through and the cheese is melted and golden.
Serve immediately with gluten free pasta of choice or allow to cool completely before freezing.
