Asian Turkey Noodle Bowls

(or Lettuce Cups)



Ingredients (Serves 3–4)

250g rice noodles

500g turkey mince

1 tbsp olive oil

1 carrot, thinly sliced

1 red capsicum, thinly sliced

1 handful baby spinach or Asian greens

1/4 red onion, thinly sliced (optional)

Cos lettuce leaves (for lettuce cup option)

Sesame seeds, to serve


Simple Sauce

3 tbsp soy sauce (or tamari)

1 tbsp maple syrup or honey

1 tsp sesame oil

1 tsp grated ginger (optional)


Method

Cook the rice noodles according to packet instructions, then drain and set aside.


Heat olive oil in a large pan over medium heat. Add the turkey mince and cook until browned and cooked through.


Add the carrot, capsicum and greens to the pan and cook for 2–3 minutes until just softened.


In a small bowl, mix together the soy sauce, maple syrup and sesame oil. Pour over the mince mixture and stir to combine. Let it cook for another 1–2 minutes so everything is coated.


To serve two ways:

For bowls: place cooked noodles into a bowl and spoon the turkey mixture over the top (do not mix, just layer).

For lettuce cups: add noodles into cos lettuce leaves and top with the turkey mixture.


Finish with sesame seeds and optional red onion.


Serve warm and let everyone build their own bowl or cups depending on what they prefer.
