Easter Egg Rocky Road





Ingredients


• 3 cups leftover Easter eggs, roughly chopped

• 1 cup raspberry lollies, chopped

• 1½ cups mini marshmallows

• ½ cup peanuts (optional)

• 400g chocolate, melted


Method


  1. Line a square slice tin with baking paper.
  2. In a large bowl, add the chopped Easter eggs, raspberry lollies, mini marshmallows and peanuts (if using). Mix to combine.
  3. Pour over the melted chocolate and gently stir until everything is evenly coated.
  4. Transfer the mixture into your prepared tin and press down firmly to create an even layer.
  5. Place in the fridge for at least 2 hours, or until set.
  6. Slice into pieces and enjoy.
