Cheesecake Filled Easter Eggs
Ingredients
12 hollow eggs
250g cream cheese
½ cup thickened cream
100g white chocolate
¼ cup caster sugar
½ tsp vanilla
1½ tsp gelatine
2 tbsp boiling water
¼ cup lemon curd
Method
Cut tops off eggs and stand upright.
Dissolve gelatine in boiling water.
Beat cream cheese, sugar and vanilla.
Add melted white chocolate and cream.
Stir in gelatine.
Pipe into eggs.
Top with lemon curd.
Chill 2 hours.
